Aliyaa Restaurant & Bar proudly presents “Lost Recipes of Ceylon”, an exclusive kitchen takeover by Chef Sudheera Bandara on 12 & 13 November.
In this two-night dining experience, Chef Sudheera reimagines the forgotten recipes of Sri Lanka’s regions — from the coasts of Mathara to the highlands of Jaffna — reviving dishes that once defined the island’s culinary heritage.
The menu features an elegant progression of flavours:
Lemongrass-infused Lobster Thambun Hodi — a tangy herbal soup from Mathara, Sri Lanka.
Smoked Mutton Chops with Goda Hodda and Mussels Hodi with Thathi Paan — slow-cooked mutton and creamy seafood curry served with wood-fired bread.
A Main Course featuring his Signature Mud Crab Thakkadi, served alongside traditional accompaniments.
Desserts from Jaffna, including Rasawalli Kilangu (purple yam pudding) and Pani Pittu with poached fruits and roasted nuts.
Each dish is a celebration of authenticity, flavour, and memory — a tribute to the island’s diverse culinary traditions.
